The 7 Days of Breakfast: Day 4

The star of today’s blog: A Buttermilk Blueberry Muffin in a Mug

I love muffins. Like, LOVE them. Unfortunately, I don’t have the money to be buying a muffin everyday, plus store bought muffins are definitely not the healthiest things in the world. I’ll admit that this mug muffin is on the sweeter side, but I guarantee that all the ingredients are natural! This is a quick and easy breakfast/snack, and it’s super yummy too!

Ingredients:

Mug Muffin:

1/4 Cup Flour

1/2 teaspoon Baking Powder

1 1/2 Tablespoons Sugar

1 Tablespoon Melted Butter

2 Tablespoons Buttermilk

1 Egg White

1/8 teaspoon Vanilla

1/4 Cup Blueberries (Fresh or Frozen)

Topping:

1 teaspoon Butter (hard)

2 teaspoons Sugar

3 teaspoons Four

Directions:

Mug Muffin:

Combine the flour, baking powder, and sugar in a large microwaveable mug. Put the butter in a small bowl in and microwave it until melted. Then whisk the buttermilk, egg white, and vanilla into the melted butter. Add the wet ingredients into the mug that holds the dry ingredients, and stir until it’s just combined. Gently mix in the blueberries. Then pop it into the microwave! My mug muffin was cooked after about a minute and a half. It depends on your microwave, so just put it in for 30 second intervals at a time and check it often.

Topping:

Stir the butter, sugar, and flour together until it’s crumbly. I put the topping on as soon as the muffin came out of the microwave so that it kind of melted into the muffin. The topping is my favourite part, yum!!

A note on buttermilk: You can buy buttermilk, or you can make your own using regular milk and vinegar. I generally do 1 Tablespoon of Buttermilk to 1 Cup of Milk. For this recipe, I did 1/4 teaspoon of Buttermilk to 1/4 Cup on Milk, so there was a bit left over, but I find it gets to fickle to start doing crazy small batches of something. Then you just stir it and let it sit for 5-10 minutes, and voilà! Buttermilk.

I didn’t find it necessary to use a cooking spray in the mug, since there’s butter in the muffin. It came away from the sides very cleanly.
