Today for the most important meal of the day, I bring you: a breakfast parfait! (Totally proud of making that rhyme). It’s extremely photogenic, and also delicious, filling, and healthy!
So, here’s what you need:
– A small jar
– Yogurt (any flavour)
– Almonds (optional)
– Granola (recipe is below)
Then you just layer all the ingredients (in any order you want, and as much as you want) in the jar, and enjoy! You can also pop the jar’s lid on and take it with you.
Granola Recipe (total bake time: 25 mins)
2 Cups old fashioned rolled oats
1/2 Cup unsweetened shredded coconut
1/2 Cup maple syrup
1/2 tsp ground cinnamon
1 Tbsp vanilla extract
1/4 Cup melted coconut oil
Preheat oven to 300° Fahrenheit. Combine all ingredients in a bowl. Place a sheet of parchment paper on a baking tray, and spread the granola evenly on the tray. Bake for 10 minutes, then remove from oven and ‘stir’ the granola with a wooden spoon. Repeat once more, then bake for a final 5 minutes. Let cool, and enjoy! It can easily be stored in a container in the fridge.
This breakfast idea is pretty fool proof, and it kinda tastes like dessert. But healthy! For breakfast! Thanks for reading. xoxo
