It has been a ridiculously long time since I’ve posted anything! I’m going to post these final two ‘Days of Breakfast’ posts (more like 6 months of waiting, oops) relatively quickly so that we can move on to bigger and better things!
On this 6th day of breakfast, my kitchen brings to you…baked apple oatmeal! This can be a little more time consuming than some of the other breakfast ideas, but it tastes great and keeps you full for a long time. My dad said it tasted like a healthy apple pie, and who wouldn’t want apple pie for breakfast?!
1 small oven proof baking dish/bowl
1/4 teaspoon vanilla extract
2 tablespoons yogurt (I used vanilla, but plain works too)
1/4 teaspoon ground cinnamon
1 tablespoon packed brown sugar
1/2 cup large flake oats
1 small apple, diced
Preheat oven to 350 degrees. In a medium sized bowl, whisk together the egg, vanilla, and yogurt. Add in the cinnamon, brown sugar, and oats. Mix it all together and set it aside. I like to let the oats sit in the liquid-y mixture for a bit while I peel and cut up the apple, so that they have some time to soften. When you’re done cutting the apple, add it to the mix and sprinkle some brown sugar on top. Spray the oven proof dish with some cooking spray, then pour the oatmeal in. Bake it for 25 minutes, then broil it for 5 minutes more at the end. Let it cool for 5-10 minutes, and enjoy!
